Avocado Toast

There are a dozen ways to make an Avocado Toast. Here is an easy peasy one that we enjoy. This makes for a quick breakfast, a light lunch & a great after school snack for kids 


Avocado Toast (Serves 2)

Prep time: 10 minutes
Cook time: 5 minutes

Ingredients


  • 4 slices of good-quality bread (sourdough, whole grain, or country loaf)
  • 2 ripe avocados
  • 1 tablespoon lemon juice (or lime juice)
  • ¼ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil 
  • Pinch of red pepper flakes 
Optional Toppings

  • Cherry tomatoes, halved
  • Crumbled Feta Cheese
  • Sliced Olives

How To

Toast the bread until golden and crisp.

Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.

Add the lemon juice, salt, and pepper. Mash with a fork until smooth or leave it slightly chunky, depending on your preference.

Spread the avocado mixture evenly over the 4 slices of toast.

Drizzle with olive oil, if using, and sprinkle with red pepper flakes.

Add any desired toppings and serve immediately.


Serving Suggestions

Serve with fresh fruit, a side salad, or a cup of coffee or tea for a simple breakfast or light lunch.

Tip: To keep the avocado bright green, mix in the lemon or lime juice as soon as you mash it.
