There are a dozen ways to make an Avocado Toast. Here is an easy peasy one that we enjoy
Avocado Toast (Serves 2)

Ingredients
- 4 slices of good-quality bread (sourdough, whole grain, or country loaf)
- 2 ripe avocados
- 1 tablespoon lemon juice (or lime juice)
- ¼ teaspoon salt, or to taste
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon extra-virgin olive oil (optional)
- Pinch of red pepper flakes (optional)
Optional Toppings
- Cherry tomatoes, halved
- Crumbled feta or goat cheese

- How To
- Toast the bread until golden and crisp.
- Cut the avocados in half, remove the pits, and scoop the flesh into a bowl.
- Add the lemon juice, salt, and pepper. Mash with a fork until smooth or leave it slightly chunky, depending on your preference.
- Spread the avocado mixture evenly over the 4 slices of toast.
- Drizzle with olive oil, if using, and sprinkle with red pepper flakes.
- Add any desired toppings and serve immediately.
Serving Suggestions
Serve with fresh fruit, a side salad, or a cup of coffee or tea for a simple breakfast or light lunch.
Tip: To keep the avocado bright green, mix in the lemon or lime juice as soon as you mash it.
