 HOW TO MAKE ALOO BHINDI

You Will Need:

  • 1 lb okra (bhindi), washed and trimmed
  • 2 large potatoes, diced
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 cloves of garlic, minced - Optional
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 teaspoon Garam Masala
  • 1 teaspoon Kasuri Methi 
  • Salt, to taste
  • 2 tbsp oil
How To:

Heat oil in a pan over medium heat. Add cumin seeds, and let them crackle.

Add onions and garlic, and sauté for a couple of minutes.

Add tomatoes and cook until they are soft and mushy.

Add turmeric powder, red chili powder, Garam, Masala and salt, and mix well. 

Next, Add potatoes and okra, and mix well. Cook for 10-12 minutes or until the vegetables are cooked through.

Stir occasionally to prevent sticking and burning.

Add crushed Kasuri Methi at the end. Add finely chopped coriander & mix well.

Serve hot with rice & dal or chapatis
