Cabbage Pulao

Cabbage is one vegetable that we are quite bored of at present. I always make a quick stir fry (Palya) out of it as my family doesn't really care about Cabbage Sambar or Cabbage Dal .. 

Apart from adding it to Noodles or Fried Rice, I didn't know how to out it to use .. I made a quick Cabbage Pulao with shredded Cabbage & onions. Honestly, it was quite nice 

Cabbage Pulao


I am going to be making this often as a weekday lunch, now that we are in the middle of Online Schooling chaos, we need loads of under 30 minute meals :)

Serves 4 

Ingredients:

  • 2 cups or Half a head of Shredded Cabbage 
  • 1 large Onion - sliced lengthwise 
  • 1 1/4 cup of Basmati Rice (I've used the traditional Paavu Measurement)
  • 1/2 cup Frozen Peas /Edamame
  • 2 cups Water (Preferable Hot)
  • Salt as per taste 
Spices Needed:
  • 1/2 teaspoon Turmeric Powder 
  • 1 teaspoon Red Chilli Powder 
  • 1 powder MTR Pulao Masala 
  • 1/2 teaspoon Kitchen King Masala 
To Temper 
  • 1 teaspoon Cumin Seeds 
  • A small stick of Cinnamon 
  • Two bay leaves  
  • 1/2 teaspoon Ginger-garlic Paste 
Method:

In a Pressure Cooker, Heat Oil & Ghee. Splutter Cumin seeds, Add Bay Leaves, Cinnamon Sticks, Ginger-Garlic Paste & Sauté for 30 seconds 

Add sliced Onions & some salt. Sauté for a couple of minutes. Add all the Spices & sauté for 2-3 minutes until the Onions are slightly cooked 

Add shredded Cabbage & continue sautéing for another couple of minutes  Add Basmati rice & fry for a minute

Add 2 cups of water (preferable hot to speed up the cooking process)

Throw in the green peas/Edamame (I used Edamame as I ran out of Peas & I think Edamame makes an excellent substitute) , check for salt & deglaze the pot

Close the lid & Pressure cook for 1 whistle 

Upon releasing the pressure, garnish with chopped coriander & gently fluff with a fork

I will be pairing it with some Spicy Salna on the side, the next time I make this. But you can serve it with Raita too 

You can also cook this in an Instant pot. Pressure Cook on High for 4 & NPR for 3 Minutes & release excess pressure after the completion of  3 minutes
