Khamang Kakdi | Kakdi Chi Koshimbir | Maharastrian Style Cucumber Kosambari

Khamang Kakdi or Kakdi Chi Koshimbir is a popular Maharastrian Side dish very similar to our Kosambari. The Only difference is the addition of roasted & crushed Peanuts which gives it an amazing flavor

Summer has officially begun & Its not my favourite season :( so simple I'm all for simple & quick meals like this 

 How To Make Khamang Kakdi 

You Will Need:

  • 1 large Cucumber
  • 1/2 Cup Peanuts 
  • 2 tablespoons Grated Coconut 
  • Chopped Coriander for garnish 
  • Juice of Half a lime 
  • Salt
To Temper:
  • 1 tablespoon Oil 
  • 1/2 teaspoon mustard seeds
  • 2 slit Green Chilies
  • 4-5 Curry Leaves
  • A pinch of Asafoetida 
How To:

Dry roast Peanuts until crisp on the outside. Should take 2-3 minutes. Coarsely crush them in a blender or use a Mortar - Pestle 

Peel the Cucumber & Chop off the edges. Finely chop them & transfer into a bowl . Add the crushed peanuts, Grated coconut 

In a small pan, heat Oil & temper with mustard seeds, Asafoetida, Curry Leaves & Green Chilies

Pour the Tempering over the cucumber-Peanut Mixtur, Add Chopped coriander, lime juice & mix well 

Serve as a side dish or eat as a Salad
