A Hearty Pulao made with vegetables, Spices  & a blend of couscous, Orzo & Split Garbanzo known as the Harvest Mix from Trader Joe's

Harvest Mix from Trader Joe's is one of my favourite things to buy. Its so versatile. You can use it to make warm salads, make Indian Style Upma/Pulao. 
I even substitute Tapioca pearls with this in Sabudana Khichdi 

I tried the Veggie Pulao with this harvest mix in an instant pot.. A pretty easy & fuss free recipe. A good under 30 mins recipe, making it perfect for a weeknight meal or a quick lunch

WHAT IS TRADER JOE'S HARVEST BLEND?

This Harvest Grains Blend from Trader Joe’s has Israeli couscous, along with red and green orzo, split dried garbanzo beans, and red quinoa

This blend can be used in several ways. I usually make this Indian style hearty Pulao & it tastes great for a weeknight meal along with some cut up veggies & some yogurt on the side.


Trader Joe's Harvest Mix Pulao

You Will Need:
  • 1 lb packet Harvest Mix  
  • 2 cups  hot water 
  • 1 small Onion 
  • 1 medium sized Potato - Diced 
  • 1 medium sized Carrot - peeled& diced
  • 2 handfuls of Green Peas 
  • A small chunk of Cauliflower - cut into florets 
  • Salt as per taste 
  • A handful of fresh coriander 
Spices:
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon MTR Pulao Masala
  • 1/2 teaspoon Garam Masala
  • 1/4 teaspoon Turmeric Powder
To Temper 
  • 4-5 cloves of Garlic 
  • A small piece of Ginger 
  • 1 teaspoon Cumin Seeds
  • 3 tablespoons Cooking Oil or Ghee 

How To:

Select the 'Normal' Sauté mode in an Instant Pot 

Heat Oil or Ghee, splutter Cumin seeds, Ginger-Garlic Paste & sauté for 10-15 seconds

Add All the vegetables one after the other. Add Red Chilli Powder, MTR Pulao Masala, Garam Masala & Turmeric Powder & sauté well for 2 minutes 

Add 1.5 cups of harvest mix & add some salt.Mix well

Add 3 cups of Hot water. Deglaze the pot. 

Cancel the Sauté mode & Select the Pressure Cook Mode & choose Zero minute pressure Cooking

Do an NPR for 7 minutes.After 7 minutes, release any remaining pressure 

Fluff with a fork & garnish with chopped coriander

Serve while still warm


WHAT IS ZERO MINUTE PRESSURE COOKING?


For certain dishes that don't need a lot of cooking time, zero minute pressure cooking works well

After you choose the Pressure Cook mode, set the timer to Zero Minutes. The instant Pot will build up pressure & the moment the pressure is built, it switches off & switch to the Keep Warm Mode
