Carrot Palya is a simple homestyle Stir Fry made with Grated Carrots. It tastes great as a side dish. Can also be eaten as a Salad if served Raw 

Carrot Palya

A simple home style carrot Palya that takes less than 5 minutes to put together if you have grated carrots on hand. If you have a food processor, grating carrots is a breeze

As a kid, my mom made this to be eaten as a side dish with Anna Saaru (Rasam) .. I also loved eating this with Chapatis. In Winters, mom would add fresh Green Peas to this. So Delicious !!


You Will Need:

  • 4 large Carrots - Peeled & grated
  • 1/4 cup Grated Coconut 
  • Fresh coriander for garnish 
  • Juice of Half a lime 
  • Salt

To Temper:

  • 1.5  tablespoon Cooking  Oil
  • 1/2 teaspoon Mustard seeds
  • 1 teaspoon Urad Dal
  • 1 teaspoon Chana Dal
  • A Pinch of Asafoetida 
  • 4-5 Curry Leaves
  • 4 Green Chilies - finely chopped 
How To:

Wash & Peel the Carrots. Grate using  a box grater or a food processor 

In a pan, heat oil, splutter mustard seeds. Add Asafoetida, Urad & Chana Dal & fry on low heat for 15-20 seconds

Add Chopped Green chilies & curry leaves & sauté for another 10-15 seconds

Add in grated carrot & some salt & sauté for a couple of Minutes until the carrots turn a little soft. No need to overcook the carrots 

Add grated coconut & mix well & turn off the heat

Add Lime juice & mix well. Garnish with chopped coriander 

This tastes great with Rice & Saaru or any Dal 

It also goes well with Chapatis, especially for kids

Serving this as a Raw Salad (Kosambari)

You can also make this as a Raw Kosambari (Salad). Instead of sautéing the carrots, Add the prepared tadka into a bowl of grated carrots, 

Add salt, grated coconut & coriander & serve. This tastes delicious as well. My Mother In Law makes it this way

Do Not Overcook the Carrots 

The Idea of sautéing the carrots is to remove the raw taste in them. Do not sauté them for more than 2 minutes as they will get over cooked a start turning mushy 

Sautéing for a minute will slightly cook the carrots. It is ok if the carrots are  slightly raw.
